Resting my pasta dough

My pasta recipe says to allow the dough to rest for 30 minutes. Do I put it in the fridge or leave it out to rest?



Your dough should rest on your kitchen worktop or a plate. It should be well floured and ideally covered with a tea towel or kitchen paper.

In my opinion the 30 minutes is a little over the top. In my Italian family's experience, and that of the 2 Italian kitchens I've had classes in, 5-10 minutes should be plenty.

Then you can get to rolling, chopping, cooking and (the good bit), munching!
