Pasta olio e aglia (oil and garlic pasta, AKA 'Pavarotti's Pasta')

Serves 2


- Boiling water with a good handful of salt.

- 1 packet of capellini pasta (I like the Barilla) or if you use the nests, throw in about 3 - 6 per person.

- Roughly 3 tablespoons of extra virgin olive oil

- 2 cloves of garlic - chopped very fine

While the pasta's cooking (follow the recipe on the package) saute the garlic until it's golden. If you cook it too long, it gets bitter.

Drain the pasta and pour the olive oil and garlic over it, and toss. Serve immediately.

More people to serve? Just add more pasta and more olive oil (by 1 tbsp) and garlic (by 1 clove).
