Italian Side Salad Recipe

Well this is not a pasta recipe, but it is a fine side salad to go with any pasta dish, and so easy to put together!

Italian Side Salad Recipe
1 1/2 cups - romaine lettuce, shredded
1/2 cup - tomato, seeded and sliced
1/2 cup - great northern beans canned, drained
1/4 teaspoon - dried rosemary, crushed
1/4 teaspoon - pepper, fresh-ground
2 tablespoons - low sodium chicken broth
2 tablespoons - balsamic vinegar
1 teaspoon - olive oil

- Combine the first 3 ingredients in a bowl; toss gently.

- Combine rosemary and next 4 ingredients; stir well.

- Pour over lettuce mixture, and toss gently.

You could even add some of your favorite pasta to make a complete pasta salad dish.

Then just a bit of the old Garlic Bread your best glass of Vino and some Great Company = very healthy for the mind, body and soul!

Sounds deliciously healthy to me Marylyn.

I particularly like the idea of then throwing some 'al dente' penne pasta in there to make a quick n' nutrituous lunch. Buono!
