This is one of many wonderful Italian cookbooks that focuses on a specific region's cuisine, in this case the Emilia-Romagna area which contains the splendid city of Bologna (where the spaghetti meat sauce comes from!).
In it author Lynne Kaspar has assembled a lip-smacking collection of typical local dishes, ranging from fresh tortellini pasta to bolognese ragu, and using the very best ingredients the region has to offer like parmigiano- Reggiano cheese and balsamic vinegar.
Serious gastronomes will love this book, thanks in part to its great reader empathy. It really displays the author's keen understanding of the challenges a home chef faces, for example when timing and preparing a multi-course meal for guests.
From its lamb, garlic & potato roast to its ingredient guides and list of mail order sources, this award-winning release is an essential read for any bonafide Italian food cook. (And boy will it make you want to explore this less touristy part of the old country!)
