How to make transparent pasta parcels

Hi Matt,

I am looking for a trick of making pasta parcels (ravioli or tortellini) transparent, so the colourful fillings are shine through.

I don't think there is egg in the pasta. Can you help?

This recipe should help...

Hi Klaus and thanks for your query,

I suggest you try making such pasta parcels with egg-free fresh pasta, as this is more translucent than normal, thicker egg pasta.

Egg-free pasta dough is made using a particular flour (durum wheat 'semolina' flour), water and a pinch of salt. You can find the recipe for it here: http://www.pasta-recipes-made-easy.com/vegan-pasta.html
