Atlas pasta machine on my Moroccan table

This Atlas machine was passed down by a frustrated pasta person. I refuse to be frustrated.

I've experimented with pasta dough recipes and make a strange lumpy fettucini that tastes great. I hope to use your website to improve the consistency of the dough.

Do let me know how you get on, both with the pasta dough and the machine in general.

Re: the lumpiness, I would suggest you make sure you're folding, flatting and refolding the dough enough to get the right dough consistency, before you start putting it through the rollers. (See
this pasta dough recipe for more on this).
