What is a good substitute for semolina flour?

by Livia
(Puerto Rico)

Can I substitute semolina flower (I can't find it where I live) for all-purpose or wholewheat flour?

Answer: Hi Livia and thanks for your pasta flour question.

I'm afraid it won't work to do just a straight substitution, because semolina (or 'durum wheat') flour is the best (and only) real flour for making pasta dough with just water. It's a matter of the properties of the flour itself.

However... you can of course make pasta dough using all-purpose flour (or a 50/50 split of all-purpose and wholemeal), but you will need to add eggs to the mix.

I suggest you follow this making fresh pasta guide or see my how to make pasta video series which also focuses on egg pasta).

Hope that's clear, do let me know how you get on!
