Want to make fresh pasta in the am to serve at dinner. How do I handle the pasta til using it?
Hi Matt - I'm having friends for dinner and would like to make fresh pasta.
If I make the fresh pasta in the morning, how do I keep this pasta until it's time to cook it for dinner?

Answer: Hey Dee and welcome to the pastaholic club!
This one's easy... just make your fresh pasta and then keep your fresh pasta shapes on a lightly floured plate or pastry mat - covered with kitchen paper - until the evening time.
Then just drop them in your big pan of well-salted boiling water and they're done (shape-dependent but roughly...) a minute or so after they rise to the surface. Don't forget to stir them continually, especially if long pasta shapes like tagliatelle.
