Trattoria dei Mosto, Conscenti di Ne (nr Genova), Italy

by Giovanni
(Rapallo, Italy)

Trattoria dei Mosto is a small cute restaurant, as you can see at www.trattoriamosto.it

They make a special pasta dish called ‘Mandilli de sea’ (which in Genovese dialect means ‘silk hankerchiefs’). These are very thin pasta squares served with either mushroom cream (crema di funghi) or pesto. It's really unique!

Buono!
by: Matt - Pasta Recipes Made Easy

Hi Gianni,

Thanks for your thoughts - I'll have to try this place when next in Liguria as it sounds perfect... small, cute, off the beaten track and a little-known pasta dish just waiting to be munched. Lovely.

Went, loved it, and here's the recipe!

What a wonderful little place! It's a serious pasta foodie destination, with great prices, and just half an hour inland from Liguria's stunning coastline.

While there, Chef Katia even took the time to teach me their signature dish.

It is called 'mandilli de sea' (silk hankerchiefs), made from fresh pasta with parsley leaves inside, and all smothered in a wonderfully creamy porcini mushroom sauce.
