What is stainless steel?

This is a common name for metal alloys that are made from at least 11.5% chromium and over 50% iron. Blends containing 18% chromium with either 8% nickel (called 18/8) or 10% nickel (18/10) are commonly used for kitchen equipment. The folks over at only-cookware.com regard the 18/10 grade as the very best you can buy.

Stainless steel is so-called because it doesn’t stain and is one of the most hygienic surfaces for preparing food on. It’s easy to clean as its surface is pure (there are no cracks or pores because stainless steel is non-porous) – so dirt and bacteria cannot get in there and hide.

What are the benefits of stainless steel?

- Light-colored and very shiny, it looks great in the kitchen
- It requires minimal care – because it’s very hard it won’t chip (unlike aluminum), plus it doesn’t rust and is very easy to clean
- It doesn’t retain any flavors or seasoning, so it won’t affect the taste of the food you cook
- It does not react with acidic foods (such as
tomato sauces), unlike aluminum
- Stainless steel kitchenware can easily last a century and can then be recycled easily.

Which is the best-of-the-best steel pan set?

Look out for ‘All-Clad' stainless steel sets and pans. This renowned company’s 'cladding' method retains the benefits of stainless steel - super-hard, reaction-free and easy to clean – but adds a central aluminum core that is better at spreading heat throughout the pan. On the downside, these pans can be quite expensive.
