Questions about making bolognese sauce

by Moey

Hi - would u please be kind enough 2 advise me on this bolognese sauce recipe?

I'll be using 3kg of mince and 6 tins of whole peeled tomatoes.

Should I drain the water from the tin or not?

And with the ingredients how much do I need to add of each?

Please advise!

Just multiply - if you've the pans!
by: Matt - Pasta Recipes Made Easy

Hi,

I hope you have a big cooking pan or two - cos' that's a lot of sauce! :-)

Well your mince and tom amounts are simply 6 times as much as the recipe here suggests.

And considering that recipe serves 4 (pasta sauce only), your ingredients should make 24 pasta sauce servings (based on one 100g serving per person).

So you have your meat and toms... for all the other ingredients just multiply the amounts shown by 6 (this equates to 6 medium onions, six sticks of celery etc.)

I hope that clears up any confusion. And finally, with the toms, yes include the juice from the tins - just pour it all in there!

Enjoy!

Matt.
