Order of layers
Is there any problem having the cheese layer on top?
Will the lasagna be too dry?
Answer: Generally speaking, we just pop a little grated parmesan on the top layer, as chunks of mozzarella can very easily burn in the oven.
Having said that, if you pop a little on at the last minute and only until it melts, that should be fine (and it won't dry your lasagna out as mozzarella is very moist and full of water).
