Carmelita's cooking courses span a range of Italian regions, with different themed breaks available in each area. These locations include:

Who teaches the classes?
Carmelita and her team will help you celebrate the richness and variety of Italian regional cuisines, with a focus on the region you choose for your once-in-a-lifetime cooking vacation. Cook Italy is the longest established full-time Bologna cooking school, operating since 1999, so Carmelita and co. really know their stuff.
What types of dish and cooking techniques are covered?
As Carmelita herself explains, "In a warm relaxed atmosphere we prepare attractive, delicious dishes that are truly Italian, for instance traditional Tuscan, Bolognese or Milanese cuisine. We use very few ingredients at their superb seasonal peak, simply and skillfully prepared to enhance their excellence."Take a course in Umbria for example, and you'll work with wild fennel, green asparagus, game, beef and veal, Pecorino cheese, tiny Castellucio lentils and more, washed down with excellent red Sagrantino and Torgiano wines. Or head to Carmelita's base of Bologna in Emilia-Romagna (an Italian delight that many tourists have yet to discover) and instead tortelloni, lasagna, tagliatelle al ragu, parma ham, balsamic vinegar and Parmigiano Reggiano cheese will be the order of the day.
When do classes take place?
Carmelita's Italian cooking school runs courses right throughout the year - from market tours in January all the way through to her Bologna Christmas Lights break in December.See her school's current course schedule here.
