Italian Cookbooks: The Medieval Kitchen: Recipes from France and Italy
by Matt
(Pasta Recipes Made Easy)
Traditional Italian (and French) recipes don't come much older than these!
This cookbook is the English translation of a foodie tome called
La Gastronomie au Moyen Age: 160 Recettes de France et d'Italie, which was published in Paris back in 1993.
Its three authors - historians Odile Redon, Silvano Serventi and Françoise Sabban - have brought back to life 153 Middle Ages recipes in total - ranging from roasted meats and traditional pies, to berry sauces, soups and pasta dishes.
The book also lists its historical sources in a separate 'Bibliography' and recipes are matched with their original documents in a section named 'Recipes by Manuscript Source', so you can really see and trust where these historical dishes are coming from.
An interesting and eye-opening book.
