One of several vegetarian-friendly reads in this Italian Cookbooks Guide, 'Pasta e Verdura' (pasta and vegetables) is packed full of nutritiously scrumptious sauces, designed to suit whatever pasta shapes you have lying around just waiting to be munched.
It's not what you would call a pure health book however, as it instead simply proves that with Italian cooking meat is really not an essential component. Italians simply love whatever is tasty, and the dishes in this wonderful publication are that and then some.
The recipes in Pasta e Verdura are grouped by vegetable and listed alphabetically, meaning you'll first get to read about braised artichokes with tomatoes and thyme (including some excellent supplementary info such as how to choose, prep and store artichokes), before moving onto delectable dishes like portobello mushrooms with rosemary puree, fresh parsley pesto and slow-cooked zucchini.
This approach is doubly useful for when you have a lot of one particular green leftover - just hit the chapter in question and get inspired.
Pasta junkies, vegetarian or not, will get a great deal out of this mouth-watering read. Highly recommended.
