Freezing lasagna - before or after cooking it?

by Barbara Stewart
(Round Rock, TX)

I have lasagna all layered in a freezable dish and I'm not sure whether I should freeze it before it is cooked, or after it is cooked... ?

Please advise Matt!

Cook, stand, freeze
by: Matt - Pasta Recipes Made Easy

Hi Barbara,

We always cook the lasagna and then let it cool for a good while before freezing it.

The reason is simple - lasagna tends to take on a more stable, secure form when cooked and cooled, whereas the layers and ingredients of an uncooked lasagna can slide around a lot in the freezer drawer.

You'll find more info, including a free downloadable Freezing Lasagna quick-guide, over on this page.

Hope that helps,

Matt.

PS: And since you're obviously a lasagna lover, you might also like my easy pasta cookbook: it has an entire section packed with easy-to-print lasagna recipes and comes supplied with a free and exclusive Lasagna 101 guide. Ciao!
