Hi Matt - I made too much eggplant parmesan and hate to waste it.It is already cooked in sauce. Can I freeze it?Response: Absolutely, we do this all the time.Considering we love eggplant parmesan (or 'aubergine parmigiana' depending on where you're from) as a side dish or in sandwiches, we tend to portion it up and then freeze it. This way you have way more flexibility... and the way I see it, the more times you get to eat these most scrumptious of foods, the better!Matt :-)
