Chef Paolo Monti runs six different cooking tours in Italy, plus single-day Italian cooking classes at his school in Lucca, Tuscany. With decades of restaurant experience, a global outlook and several languages spoken (including great English), Chef Paolo's courses are a great foodie choice.
Where do classes take place?
Chef Paolo's single-day 'hands-on' Italian cooking classes take place in Tuscany at Hotel Carignano in the town of Lucca. As for his cooking tours in Italy, these 7-day courses take place in several different regions. They include:

Who teaches the classes?
Since graduating from catering college in his home town of Montecatini Terme, Tuscany, in 1970, Chef Paolo quickly worked his way up the culinary and hotel industry ladder, passing through several countries in Europe, U.S.A. and the Middle East. During his career he has launched and managed several restaurants and catering operations in several different countries.
"Instinctive cooking comes once you know what the basic ingredients are and how they combine together to make many different dishes. My Italian cuisine cooking class, or 'Cucina Italiana' as it should be correctly called, is designed for the cooking enthusiast, although professional chefs and caterers will also benefit", he says. Chef Paolo Monti speaks English, French and German, and regularly holds his cooking classes in all these languages.
What types of dish and cooking techniques are covered?
The goal of Chef Paolo's classes and tours is to give you a basic knowledge of how the Cucina Italiana is structured and prepared: the herbs, spices, olive oil, pasta, rice, combination of flavors, with the emphasis on both traditional and contemporary Italian recipes using the freshest ingredients, fresh herbs and short cooking times. He explains, "I have selected the tastiest and best Mediterranean recipes that are quick to prepare (except a few). The classes are conducted in a light, entertaining atmosphere with lots of background information on ingredients, the origin of different foods and recipes, but also jokes and fun - just like preparing the family lunch on a Sunday!"
For example, Chef Paolo's gourmet Italian cooking course (in Tuscany) includes: a main ingredients and sauces class; fish class; prosciutto, parmigiano and balsamico tradizionale di Modena; Tuscan cooking; fresh pasta and pizza class, then finally risotto, carpaccio and scaloppine class.
When do classes take place?
Single-day Italian cooking classesChef Paolo's 1-day classes can be booked for any date, with a minimum of 2 people required per class. Each class's price includes recipes in English, beverages during the class, and the chance to eat the meal you made with accompanying wine. (Classes last roughly 3 hours, then the meal!)
