Can I use semolina flour with my Kitchenaid pasta machine?
Hi there - I have a new pasta attachment for my Kitchenaid stand mixer, and the recipe call for all-purpose flour.
I've always used semolina for handrolled pasta. Can I use semolina in my pasta machine?

Hi Sharo - you should be able to, yes.
My only tip would be not to have your dough too moist, as semolina dough can be a little prone to that. And moist dough doesn't mix well with pasta machines.
To explain about the dough, I know 2 methods of making pasta dough:
- With all-purpose (or 00 type) flour and eggs (recipe page here)
- Or with semolina (durum wheat) flour and water, i.e. no eggs (recipe page here)
I guess it's the second of these approaches that you're used to?
So in short... try it, with the dough not too wet.
