Can I freeze fresh homemade lasagne sheets to use at a later date?

Answer:

Yes indeed, I reckon you can.

The first key thing will be to stop your lasagna 'noodles' (as they say in the States) from sticking together. So you could use oven paper or aluminum foil between the sheets to stop this from happening.

Then defrost at room temperature I'd say, before you layer up your tasty Italian lasagna.

How does that sound?

Now you've got me thinking about lasagna. My expression has gone all Garfield...

PS: Remember, great thickness for these fresh lasagna noodles is about 1mm. Too thin and they might fall to bits when you cook 'em!
