Nuccia's vegetable pasta recipe
This stupidly easy vegetable pasta recipe comes courtesy of my mamma-in-law's good buddy Nuccia Pelliccia. (What a cracking Italian name!). Called ‘penne zucchine pomodoro’ in Italian, it combines molten zucchini (AKA courgette) with fresh chopped tomatoes, basil and a seriously fiery chili kick.
Heidi's salmon pasta recipe
This pasta recipe was sent to me by a very kind Belgian lady named Heidi. To luscious spinach tagliatelle it adds a leek and onion crunch, fresh salmon strips, and subtle mix of herbs and spices. It's just amazing to me that a recipe as simple as this can result in such a tasty meal.
Rosetta's orecchiette pasta recipe
I received this traditional ‘Pugliese’ recipe from an Italian mamma named Rosetta Chirico. It offers a lovely contrast - rolled beef, the 'kick' of celery leaf and tomato and cheese-smothered little ears (orecchiette).
Carole's turkey tagliatelle recipe
